Snakefruit Juice Probiotic Drink as Immunostimulator Developed by Lecturer of FTP Unud

Probiotic drinks are drinks that contain a number of probiotic bacteria. The lecturer of the Faculty of Agricultural Technology, especially on Agricultural and Biosystem Engineering Study Program, Prof. Dr. Ir. I Nyoman Sucipta, M.P., Dr. Ir. Ida Bagus Putu Gunadnya, M.S. and Dr. I Putu Surya Wirawan, S.TP., M.Si. developing a probiotic drink made from local Balinese snakefruit.

 

The production of probiotic drinks uses Balinese snakeruit, jackfruit varieties and suitable for consumption, which is added with kefir as a probiotic starter. Product development of probiotic drink fruit juice with kefir as a starter has reached the research stage.

 

Research has been carried out for the development of this product, namely the physicochemical, microbiological, organoleptic and immunostimulator characteristics of experimental animal serum based on different types of sugar, namely granulated sugar and brown sugar.

 

The head of the research team, Prof. Dr. Ir. I Nyoman Sucipta, M.P. reported from the results of the study suggested in the production of probiotic drinks of Balinese snakefruit juice using brown sugar. This is because the increase in serum IgG of mice given the treatment of Balinese snakefruit kefir with added brown sugar by 31.66% and the provision of Balinese snakefruit kefir given granulated sugar and brown sugar, the mice were able to provide a specific IgA antibody response to Escherichia coli by 5 %.

 

Prof. Dr. Ir. I Nyoman Sucipta, M.P. and the team hopes that the results of this research can educate about the advantages of local Balinese probiotic snakefruit juice drinks with a kefir starter, so that in the future product innovation and product development can be obtained that can be used as characteristic products from the Bali area.
