Innovating Local Food-Based Noodles, the Student Team of the Unud Food Technology Study Program Wins 3rd Place in the National Essay and Poster Competition

A team of students from the Food Technology Study Program, Faculty of Agricultural Technology, Udayana University consisting of Ni Kadek Ery, Arlin Ramadhan Sutisna and Maria Rosary Mayaranti Putri won 3rd place in the National Essay and Poster Competition at the 2023 National Food Technology Competition (NFTC) organized by the Faculty. Agricultural Technology, Widya Mandala Catholic University Surabaya on Saturday, 11th  March 2023.

 

Ni Kadek Ery, who is often called Ery, managed to become 6 selected teams from all participants and entered the Finals and had the opportunity to present and showcase her innovative work at the Benedictus Auditorium, Widya Mandala Catholic University, Surabaya. The idea brought by Ery and the team was Mi Amor: Innovation of Noodles Based on Suweg Tuber and Pigeon Beans as Functional Food to Enhance the Body's Immunity in Overcoming the Impact of the Covid-19 Pandemic under the guidance of a Lecturer in the Food Technology Study Program, Faculty of Agricultural Technology, namely Dr. I Wayan Rai Widarta, S.TP., M.Si.

 

Ery representing her team said that the proposed idea arose due to the problem of the Covid-19 pandemic having an impact on various aspects of people's lives starting from the economic, educational and health aspects. One of the solutions to reduce the impact of the Covid-19 Pandemic is meeting the nutritional needs of the community from functional food. The use of soy beans and pigeon peas as functional foods that are rich in fiber and antioxidants is an effective innovation in fulfilling the nutrition needs of people affected by the Covid-19 pandemic. This innovation can be an alternative to wheat noodle products through product diversification. Mi Amor is expected to be able to increase people's consumption interest in local food ingredients, especially those originating from tubers and nuts, she said.

 

 

In addition, she also hopes that the writings that are included in scientific essays and posters will not only be written, but it is hoped that in the future it can also be a solution for society, especially as one of the innovative products in food diversification. She also admits that she is proud of the success that has been achieved by her team and will continue to practice and take part in other competitions to improve the achievements both in district, national and international competitions if there is an opportunity, she said.
